Chicken Biryani, LUCKI Style
If you're craving a warm, comforting meal packed with flavour, look no further than our Chicken Biryani — the LUCKI way. This recipe brings together tender chicken, fragrant spices, and fluffy basmati rice in a one-pan wonder that’s perfect for lunch, dinner, or special occasions.
Ingredients (Serves 1 to 2):
100g LUCKI Basmati Rice
200ml water
2 tsp olive oil
½ an onion, finely chopped
200g chicken, cubed
20g ginger
5g curry powder
4g dark soy sauce
3 cloves garlic
1 bunch crushed coriander
1 pinch salt
Instructions:
Wash and rinse the rice well. In a pot, bring 200ml of water to a boil, add the rice, and cook on low heat for about 30 minutes.
Meanwhile, heat olive oil in a pan and lightly fry the onions on low for 5 minutes or until softened. Add chicken, ginger, curry powder, soy sauce, garlic, and salt. Stir and cook until golden and chicken is cooked through.
Drain the rice and add it to the pan. Stir in half the coriander and cook everything together for 2–3 minutes. Serve with the remaining coriander on top.
Pro Tip: Want to level it up? Add a boiled egg, sliced chili, or a squeeze of lemon on top.
