Vegetable Rice à la LUCKI

Looking for a fresh and healthy dish that’s packed with flavor? This vibrant vegetable rice recipe is perfect for a quick meal and a great way to get your daily dose of veggies—all built on a base of delicious LUCKI rice.


Ingredients (Serves 1 to 2):


100g of your favourite LUCKI rice


200ml water


2 tsp olive oil


½ an onion


50g carrots


100g potatoes


50g green peppers


50g green beans


1 bunch crushed coriander


1 pinch salt


Instructions:


Wash and rinse the rice. Boil 200ml water, add rice, and cook on low heat for ~30 minutes.


While rice is cooking, sauté onions in olive oil for 5 minutes. Add diced carrots and potatoes and cook for another 5 minutes. Add green peppers, green beans, and salt, cooking until all veggies are tender.


Drain the rice and combine it in the pan with the vegetables. Stir in half the coriander, cook for 2–3 minutes, and top with the rest of the coriander.
